S’mores Rice Krispies (Gluten Free & Vegan)

My S’mores Rice Krispies recipe combines the delicious campfire treat with easy to make Rice Krispie treats. This recipe is gluten free AND vegan! S’mores Rice Krispies are easy to make in just 10 minutes using simple store bought ingredients, this recipe is the perfect summer dessert. Not gluten free or vegan? Do you miss the nostalgic days of going camping or hanging by a bonfire and eat s’mores. I used to love to make s’mores with different chocolate such as Reese’s Cups and Mr. Goodbar. Unfortunately, after being diagnosed with Celiac disease 8 years ago I rarely eat S’mores! This summer I decided to develop a Celiac friendly s’more recipe. This S’mores Rice Krispies recipe is vegan and gluten free!

S’MORES RICE KRISPIES INGREDIENTS

  • Crisp Rice Cereal: Did you know that regular Kellogg Rice Krispies contain gluten? The Rice Krispies cereal contains “Malt flavor”. Unfortunately, malt contains gluten therefore Kellogg Rice Krispies are not safe to those with celiac or gluten sensitivities. Luckily, I found a generic brand of rice krispies which did not contain any gluten ingredients. Other stores such as Trader Joe’s and Whole Foods carry gluten free crisp rice cereal.
  • Marshmallows: This is a staple in all Rice Krispie recipes. However, regular marshmallows contain gelatin which apparently is not vegan. I used Dandies Vegan Mini Marshmallows in my S’mores Rice Krispies. If you are not vegan you can absolutely use regular marshmallows.
  • Graham Crackers: My favorite gluten free graham crackers are made by Kinnikinnick. They make several awesome gluten free substitutions. Unfortunately, Kinnikinnick brand were sold out at my grocery store so I used Schar Gluten Free Chocolate Honey Grahams. They were delicious in this recipe!
  • Chocolate Chips: I used Enjoy Life Allergen Friendly semi-sweet mini chocolate chips. These are vegan (dairy free) and taste just like regular chocolate chips.
  • Coconut Oil: Rice Krispie recipes typically call for butter however I like to substitute coconut oil whenever possible. You can use any vegan cooking oil, or butter if you are not vegan.
  • Nonstick Spray: This will prevent the rice krispies from sticking to the pan.

INSTRUCTIONS

  • Spray a 13×9 pan with nonstick cooking spray. I used Trader Joe’s coconut oil spray.
  • Start by breaking the gluten free graham crackers into small – medium sized pieces. This can by done a few ways:
    • crumble the graham crackers with your fingers over a bowl
    • add graham crackers to a ziploc bag and break with hands or a rolling pin.
  • Set aside graham crackers.
  • Melt the coconut oil in a large pot over medium heat.
  • Next, add the marshmallows. Set aside a handful of mini marshmallows for topping if desired. Allow marshmallows to melt over medium heat, stirring frequently. This should take 1-2 minutes. NOTE: The vegan marshmallows do not melt as quickly as regular marshmallows.
  • Measure out 4 cups of rice krispies cereal. Add to the marshmallow mixture. Next, add the graham crackers and chocolate chips.
    • I recommend moving the mix to a large mixing bowl as the heat from the pot will melt the chocolate chips on contact.
  • Fold the ingredients together using a silicone spatula or other nonstick utensil.
  • Pour the mixture into the pan and push the mix evenly across the pan. Pack the ingredients tightly into the pan as the treats tend to be crumbly if they are not packed tight enough.
  • In a microwaveable bowl, add 1/4 cup chocolate chips. Microwave in increments of 30 seconds, stirring in-between. Drizzle the melted chocolate evenly across the s’mores rice krispies.
  • Next, sprinkle crumbled graham crackers and mini marshmallows on top.
  • Lastly, move the S’mores Rice Krispies to the refrigerator to cool for at least 30 minutes or allow to cool at room temperature for 1-2 hours.

SERVING S’MORES RICE KRISPIES

S’mores Rice Krispies are the perfect dessert to bring to a party because they are gluten free, dairy free and vegan. Nowadays you never know what dietary preferences or allergies people might have. This treat allows everyone at the party to enjoy their dessert! S’mores are synonymous with summertime and camp fires, however they are delicious all year round. Looking for more summertime desserts? To serve, cut the S’mores Rice Krispies into 16 treats. Remove from pan using a small spatula. Serve immediately or store in airtight container at room temperature for up to 5 days. For COVID safe serving: place a pair of tongs next to the treats, or serve each individual treat in a muffin cup.

Ingredients
  

  • 4 cups Vegan mini marshmallows (plus a handful for topping) (plus an additional cup for topping – optional)
  • 4 cups gluten free crisp rice cereal (see notes)
  • 6 sheets gluten free graham crackers (plus more for topping – optional)
  • 1 & 1/4 cup vegan chocolate chips
  • 3 tablespoons coconut oil

Instructions
 

  • Spray a 13×9 pan with nonstick cooking spray. Set aside.
  • Break up graham crackers into small – medium sized pieces. You can crumble the crackers with your fingers or smash in a ziploc bag. Set aside.
  • Melt coconut oil in a large pot over medium heat.
  • Add the marshmallows to melted coconut oil. Stir frequently until marshmallows are melted. Turn off heat.
  • Add cereal, crumbled graham crackers and 1 cup chocolate chips to marshmallow mixture. You may want to transfer mixture to large mixing bowl as the residual heat from the pot will melt the chocolate chips.
    Fold ingredients together using a silicon spatula or other nonstick utensil.
  • Pour mixture into 13×9 pan. Pack mixture tightly into pan.
  • In a microwaveable bowl, add remaining 1/4 cup chocolate chips. Melt in microwave at 30 second increments, stirring in between. Drizzle melted chocolate over S'mores Rice Krispies.
  • Sprinkle remaining graham crackers and mini marshmallows over the top.
  • Place pan in the refrigerator to cool and set for 30 minutes, or allow to set at room temperature for 2 hours.
  • Store in airtight container for up to 5 days.

Puffed Rice Cereal: The commercial name is Rice Krispies however Kellogg brand Rice Krispies are not gluten free. 
Topping Rice Krispies: I love the way this dessert looks with the additional marshmallows and graham crackers as toppings. They just scream S’mores! I recommend using 1 cup of marshmallows for topping and a few sheets of graham crackers.
