Roll-up with Red Bell Pepper

Growing up my mom used to make a similar recipe with ham, cream cheese, mayonnaise, and black olives. I still get a hankering for my mom’s appetillas however I have not been able to eat them since going gluten free in 2013 so I decided to reinvent the recipe. My version is a lighter, gluten free and dairy free version featuring everyone’s favorite EBTB seasoning.

INGREDIENTS

  • Gluten Free Tortilla Wraps: I used Mission GF Tortilla wraps which are about 8 inches in diameter. I recommend using actual wraps instead of corn tortillas as corn would not go well with this recipe.
  • Deli Meat: I think ham and turkey work best in this recipe. The first time I made this I used smoked ham, however I think the smoked flavor along with the EBTB seasoning was too salty. I recommend using black forest ham, regular ham, or uncured ham. If using turkey I recommend using oven roasted turkey.
  • Dairy Free Cream Cheese: I like Daiya brand plain dairy free cream cheese, however any brand will work. You can also try using a flavored cream cheese such as chive and onion or garden vegetable, then omit any further seasoning.
  • Everything But The Bagel Seasoning: I used Trader Joe’s brand, however I believe all major grocery stores carry their own version of this seasoning. You can try these wraps with any seasoning you like. I love going to Trader Joe’s and browsing the fun and creative flavors in their seasoning section.

Recommended Veggie Additions:

These roll-ups tend to be on the saltier side, so adding vegetables helps to balance the saltiness and add a bit of freshness. Below are some recommendations of vegetables to add to this recipe:

  • Asparagus
  • Avocado
  • Black Olives
  • Spinach
  • Bell Peppers
  • Cucumbers
Before wrapping making sure there is a 2 inch rim at the bottom not covered by deli meat. The meat will slide down as you wrap.

ROLLING IT UP

Before you create your roll-ups, make sure you allow the cream cheese to soften out of the refrigerator for 30 minutes. This will make the cream cheese easier to spread across the tortillas. Once cream cheese is softened, start by spreading 3 tablespoons of cream cheese on one tortilla. My tortillas were 8 inches in diameter. If using a larger tortilla you may need to use more than 3 tablespoons of cream cheese per each tortilla.

Next, sprinkle 1/2 tsp of Everything But The Bagel seasoning on the tortilla. Lay 4 slices of deli meat evenly across the tortilla, leaving 2 inches open at the bottom of the tortilla (refer to photos above). As you roll the tortilla up the deli meat will slide down over the open 2 inches. If you do not leave 2 inches at the bottom the deli meat will slide out of the tortilla as you roll (see above photo).

Once you have formed into rolls, tightly wrap each tortilla in saran wrap and refrigerate for 2 hours. This will allow the flavors to marry and the wrap to soften. After you have let the wraps set you can begin slicing. Start by cutting off a 1/2 inch of the wimpy ends of the wrap. You can toss these ends as they are usually bare. Next, slice each roll evenly in 3/4 inch – 1 inch wide slices. Each wrap will yield 7-8 slices. One nutritional serving is calculated as 4 slices, or two servings per each wrap.

SERVING

Pre-COVID I would typically serve these wraps on a platter and allow people to pick them up with their hands. However, since we are now living in a COVID world I like to serve with toothpicks or skewers so people don’t have to touch the food with their hands. These roll-ups are also a perfect snack for active kiddos.

Store roll-ups in airtight container in the refrigerator for 2-3 days, or until wraps begin to wilt from moisture.

Ingredients

  • 16 slices Deli Ham (see notes)
  • 4 Gluten Free Tortilla Wraps (see notes)
  • 1 Container of plain Dairy Free Cream Cheese (8 oz)
  • 2 teaspoons Everything But The Bagel Seasoning
  • 1 Optional Vegetables (see notes)

Instructions

  • Allow dairy free cream cheese to soften at room temperature for 30 minutes.
  • Once cream cheese has softened, start by spreading 3 tablespoons of cream cheese evenly across one tortilla wrap.
  • Sprinkle 1/2 teaspoon of Everything But The Bagel Seasoning evenly across the wrap.
  • Lay 4 slices of ham or deli meat of your choice on the tortilla, leaving 2 inches open at the bottom of the tortilla (I will explain).
  • Optional: add any vegetables or add-ons.
  • Start by rolling the tortilla at the top. As you roll the deli meat will move down to cover the open 2 inches at the bottom.
  • Tightly wrap the tortilla wrap in saran wrap. Set aside and repeat with remaining wraps until you have made desired amount.
  • Refrigerate uncut wraps for 30 minutes – 2 hours.
  • After refrigerated, remove from saran wrap before cutting. Start by trimming loose ends off of the wraps. Next, cut wraps into 3/4 inch – 1 inch slices (about 7-8 per wrap).
  • Store in airtight container in refrigerator for up to two days. After two days the wraps will begin to wilt from moisture.

Notes

Deli Ham: I recommend using regular ham or black forest ham, or oven roasted turkey. The first time I made this recipe I used smoked ham and I personally thought the smokiness added a little too much salt when combined with EBTB seasoning.
Gluten Free Tortilla: I used Mission’s GF Tortilla Wrap (8 inches in diameter) and found this brand worked perfectly and did not crack or break like many GF tortillas. I do not recommend using corn tortillas.
Optional Vegetables: I enjoy adding vegetables to the wraps as they offset the saltiness of the seasoning & cream cheese and add a hint of freshness. Below are my recommended additions:
  • Asparagus
  • Avocado
  • Black Olives
  • Spinach
  • Bell Peppers (my favorite!)
  • Cucumbers
