You know the feeling when you eat something at a restaurant, then dream about it for weeks after? A meal so good you can’t get it out of your head?
I ordered roasted salmon at a restaurant a few months ago and could not stop thinking about it. Juicy on the inside and slightly crisp on the outside.
I often fall back on the same old chicken breast or ground turkey when planning our weekly meals. I like to switch things up and eat fish whenever I can because it is such a great source of protein and Omega 3’s. Living in the Midwest it can be hard to find quality, wild caught seafood at the grocery store. So when I do find fresh seafood, I like to do it right! Hence this amazing garlic & herb salmon.
I love cooking sheet pan dinners as they make for such an easy clean-up and this salmon is no exception! You can add raw asparagus or broccoli directly to the sheet pan around the fish. The vegetables will soak up the flavors from the garlic and herbs and will develop a roasted texture. Pop a bag of quick rice in the microwave and boom; you have an easy, no fuss dinner complete with salmon, vegetables & rice!
THE SALMON
I try to buy wild caught fish, however that is not always an option where I live. For this recipe, I started with one large Atlantic salmon filet (about ~16 ounces). I cut the filet into 4 equal sized smaller filets, about 1.5 – 2 inches wide. The easiest way to cut equal filets is to cut the large filet in half, then cut each half in half again until you have 4 filets. Keep the skin on the salmon as we will roast in the oven with skin side down.
SEASONING
I think garlic makes everything better. Someone recently asked me what is my favorite smell. EASY! The smell of garlic cooking. This salmon is loaded with garlic, 2-3 large cloves to be exact. If you are not a garlic junkie like myself you can tone down the garlic to 1-2 cloves.
I prefer to use fresh garlic cloves when cooking. The taste of fresh garlic cannot be replicated by jarred minced garlic. However, I think jarred minced garlic is a great solution when you do not have time to mince garlic by hand. I recently started using a garlic press and it has changed my life. It is so easy to pop a few cloves of garlic in, squeeze, then out comes juicy minced garlic. The press also makes for easy cleanup and does not leave the lingering garlic smell on your fingers. Win win!
After the garlic is spread evenly on salmon, season with Italian herbs. You can definitely use fresh herbs if you prefer, however I just used the seasoning I had in my cabinet: (Not an ad) Spice Islands Italian Herb Seasoning: Oregano, Marjoram, Savory Thyme, Basil, Rosemary, Sage. I LOVE Mediterranean flavors and this blend has Oregano as it’s first ingredient which is the primary ingredient in many Italian & Greek dishes. The lemon juice brightens the flavor of the herbs and cuts through the richness of the garlic. Lemon is essential to both seafood and Mediterranean cooking, so feel free to use more! I squeezed more lemon on my salmon before eating.
Serve immediately over rice or potatoes with your favorite green vegetables. Enjoy!
Oven Roasted Garlic Herb Salmon
Ingredients
- 1 Filet Salmon (about 16 oz)
- 1.5 tbsp Olive Oil
- 1 tsp Salt
- .5 tsp Ground Pepper
- 1 tbsp Garlic Minced
- 2 tsp Italian Herb Seasoning
- 1 Lemon
Instructions
- Preheat oven to 425. Drizzle 1 tbsp olive oil on baking sheet.
- Cut salmon into 4 smaller equal sized filets, about 1.5-2 inches wide. Place filets on baking sheet skin-side down.
- Drizzle remaining .5 tbsp olive oil over filets. Season with salt & pepper.
- Spread minced garlic on salmon, then season with Italian Herb Seasoning.
- Squeeze juice of 1/2 lemon on salmon.
- Bake for 15 – 18 minutes until desired doneness. Serve with potatoes, rice and your favorite vegetable.
