Oats have been gaining popularity online lately. I am ALL about this trend because I eat them for breakfast at least 2x per week. After one of the worst winters on record, we are all ready for warmer weather. With springtime upon us, I wanted to create an oats recipe with springtime flavors. Lemon Blueberry Oats!
Oats are a hearty cool weather breakfast in the midwest. I grew up eating Quaker Oats packets. My oat palette has matured since those days of eating fake sugar dinosaur eggs in my oatmeal. Now I love to try new oat flavor combinations: chocolate & peanut butter, apple, pumpkin, the list goes on! However all of these flavors lean towards fall/winter. It is time to brighten up the kitchen with my Lemon Blueberry Oats!
I am so impressed with how these turned out. I usually like to incorporate an element of protein in my oats, so I added 1 scoop of vanilla protein powder to this recipe. You can also add collagen powder. If you do not add vanilla protein powder, simply sub 1/4 teaspoon of vanilla extract to the mix. Also, you may want to cut back on the amount of almond milk without protein powder. I used 1 + 3/4 cup of almond milk because the protein powder thickens the moisture.
This is just a single serve recipe, however I am going to work on creating a baked oatmeal version which will have more servings. Perfect for breakfast during spring & summer!
Lemon Blueberry Oats
Ingredients
- 1/2 cup Quick Oats (Gluten Free)
- 1 & 3/4 cup Almond Milk (or any milk of choice, use less if not adding protein powder)
- 1/2 cup Blueberries
- 2 tablespoons Lemon Juice
- 2 tablespoons maple syrup
- 1/2 teaspoon Lemon Zest
- 1 scoop Vanilla Protein Powder (Optional, can sub collagen powder if desired)
Instructions
- Zest 1/2 teaspoon of lemon
- Combine oats, almond milk, maple syrup, lemon juice, 1/4 teaspoon lemon zest (save the rest for topping) and 1 scoop of protein powder (sub for 1/4 teaspoon vanilla extract if not using protein powder).
- Fold 1/4 cup blueberries into the mix. Save the remaining 1/4 for topping.
- Microwave for 2 minutes. Top with remaining blueberries & lemon zest. Enjoy!
